Great! I just emailed my mom (because I'm at my dad's ATM), so I'll get it to you as soon as she replies! :D

Sorry it took so long, my mom sent it to me a couple of days ago, but for some reason it wasn't arriving in my inbox.

Shortbread recipe...

Ingredients:
- 2 cups flour
- 1/2 cup icing sugar
- 1/2 lb. Butter
- Pinch of salt
- Pinch of baking powder (optional, I leave this out)

Instructions:
Soften butter (don’t melt it). Add ingredients into one bowl and using a pastry cutter, cut butter into dry ingredients until small pea size pieces form. With your hands, form batter into a ball and push the ball of dough once to three times against the side of the bowl to mash all ingredients together. Put dough onto counter (dust counter with flour so the dough won't stick), flatten with hands and then roll out evenly into 1/4 inch thickness. Cut into shapes with cookie cutters.

Place on cookie sheet about 2” apart, poke with a fork to make a row of holes so the air can escape during cooking. If bubbles form just poke them with a fork again while cooking and the bubbles will go away.

Bake at 350 degrees for 8-10 minutes.

Best ones ever. Made them with three types of chocolate, was in heaven. :P

Chocolate Chip Cookies
Ingredients….
125g of unsalted butter (room temp)
1 ¼ cups of tightly packed brown sugar
1 tsp vanilla essence
1 egg, lightly beaten
1 ½ cups of flours
½ tsp baking powder
Pinch of salt
250g good quality chocolate roughly chopped
Preheat the oven to 180 c. Line baking tray with baking paper.
Place butter and sugar in a bowl and beat till light and creamy. Add vanilla and egg to the mixture.
Sift flour, baking powder, and salt over the sugar mixture, and, using a wooden spoon, fold the chocolate pieces through.
Using a tablespoon, roll spoons of the mixture into balls, and flatten them lightly with a fork. Bake for 15-20 minutes, take out when golden.
